I have been considering a RDX Drive Array, anyone got experience on this?

Should I go with Western Digital Red drives or Seagate Ironwolf?

no idea, but you dont need it that strong, server specs i wrote were for a smaller firm, i guess around 50-100 ppl at once

Don't really understand the point of putting the i7 in a server build but ok - were all these parts bought from new?

For supporting multiple users, i think you'll need special hard drives (RAID5) and the normal ones won't do good.
I don't have much information about it, please do post if you find anything.

I'm using special NAS drives that are verified for 24/7 usage.
I'm most likely going with Western Digital Red drives since they're a bit more energy and heat efficient compared to the Seagate Ironwolf.

Xeon processors have some special features such as Support ECC memory, Higher core counts, large cache memory and so on. Also it is mainly targeted at server and workstation.

I am most likely delaying this project for a couple of months since I'd rather buy a (new) bow for now.
Archery is a rather expensive sport and I'm not THAT rich :P
